We are about to turn a page in our lives, to begin a new chapter. In just 6 weeks we will pack up all our belongings and head 1,400 miles across the country. Our time here in Louisiana has been wonderful…and at times, very difficult. Thankfully, I have had wonderful friends who have eased my burdens when they’ve been difficult to bear.

My friendshave been there for me during the times my husband was away at training or TDY (temporary duty assignment). Theybrought over meals when Little Z was a newborn and The Husband had to go to a training for a couple weeks. They call and text just to see how I’m doing. I’m so blessed to have friends who still believe parenting is a community effort.

Before we get too busy with moving plans I wanted to do something to say thank you to at least one of these families who has helped us out so much while we’ve been here. The Husband and I decided to invite over a couple who has saved my bacon many a time by watching my little ones. The wife, my friend, is a busy mom of three little ones just like me. Despite that, she’s taken the time to watch my children when I’m in need.

I wanted to make a special dinner so I decided to put a delicious twist on my favorite oven baked porkback ribs! I love a good rack of ribs! And this Coca-Cola Baby Back Ribs recipe is so easy!Coca-Cola Baby Back Ribs Recipe + Saying Goodbye to Good Friends - Oh So Savvy Mom (2)

I headed to Brookshire’s to pick up all my ingredients. I was absolutely blown away by all Coca-Cola #ShareAco*ke names! The 20-ounce bottles feature proper names, the mini cans feature fun sayings and emoticons, and the glass bottles feature celebratory names such as “Grad”. So fun! The older couple ahead of me in the check out line were “wowed!” too. The gentleman hadn’t intended to purchase any co*ke on his shopping trip, but, as he said, “I saw my wife’s name and I just had to buy her a bottle! I mean, it hadher name on it! It was so amazing, I just had to buy it for her.”

I wasn’t quite sure what I’d need for our dinner party and my Coca-Cola baby back ribs recipe so I just bought a variety…

Ingredients

  • 1-2 racks of baby back ribs (also called pork loin back ribs) (I used two for this recipe)
  • 2 20 oz bottles Coca-Cola
  • 1 tbsp dry mustard powder
  • 1 tbsp cinnamon
  • 1 cup packed brown sugar
  • 1 cup ketchup
  • 1/3 cup of your favorite barbecue sauce
  • 1 7.5 oz mini can of Coca-Cola

Instructions

  • Remove the ribs from packaging, flip over so that the meaty side is down and bony side is facing up.
  • Using a sharp knife, begin cutting back the thin membrane until you have enough off that you can grip it to peel it back by hand.

  • Place the ribs in a large rectangular baking dish (you may need to cut them in half). If you are cooking two racks of ribs and do not have two baking dishes, you can put the ribs in a deep mixing bowl.
  • Pour enough co*ke from the 20 oz bottles to cover the ribs.
  • Cover the dish tightly with plastic wrap or a lid and place in the refrigerator overnight.
  • When you're ready to cook them preheat the oven to 300 degrees.
  • While the oven is preheating, make your sauce:
  • Combine mustard powder, cinnamon, brown sugar, ketchup, barbecue sauce in a food processor or magic bullet. After those ingredients are combined, gradually stir in the 7.5 oz can of co*ke.
  • Place the rack of ribs on a tin foil-lined baking sheet. The tin foil should be wide enough and long enough that you can wrap the rack of ribs completely. I use two equal-length pieces and overlap them several inches in the middle. This makes the foil wide enough to wrap around the ribs.
  • Brush both sides of the ribs with approx. 2/3 of the sauce.
  • Wrap the ribs up in the foil, sealing the ends, and place in the oven.
  • Bake for 2 1/2 hours. If you are baking 2 racks you will want to increase your time by 30 minutes.
  • Remove from oven, open the foil and brush the remaining third of the sauce onto the top (the meaty side) of the ribs.
  • Set the oven to broil and cook for an additional 10-15 minutes, checking frequently so as not to burn the sauce. This will caramelize the sauce on top.
