How to Make Beef and Noodles in a Crock Pot

Roast is seriously one of my favorite meals. Succulent meat with juices to pour over your meat, noodles and/or mashed potatoes? Oh. My. My mouth is watering just thinking about it!
Add to that fact that this Crock Pot Beef and Noodles from Gooseberry Patch’s 303 Simple & Satisfying Recipes is super easy to make, and you have me sold! Growing up, I would have thought that roast was seriously hard to make. I would have never believed that something that delicious could be so easy to throw together.
With my pregnancy with Little Miss Iyla, I have developed a strong diversion to onion. I still LOVE the flavor, but accidentally eating some pieces of onion doesn’t work for me right now. So, I used dried minced onion and just reduced the amount. Feel free to use fresh onion in yours. I am sure it will be delicious…and something I will have to try once I am no longer controlled by the fun side-effects of pregnancy. (Both measurements are in the recipe below).
Now for the super easy, oh-so-yummy recipe!
What You Need for Crock Pot Beef and Noodles
Ingredients Needed
- 2 lb beef chuck roast
- 4 cups beef broth
- 1 cup onion, chopped (or 1/4 cup dried minced onion)
- 2 teaspoons onion powder
- 1 tablespoon dried parsley
- salt and pepper to taste
- extra wide egg noodles, prepared and/or mashed potatoes, prepared
Equipment Needed
- Measuring cups
- Measuring spoons
- Sharp knife
- Cutting board
- Large bowl
- Stirring spatula
- Two forks
- Ladle
- 6 quart crock pot
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 6 to 8 hours on low, until it is fork tender (With a roast, I do not recommend cooking it on high. Cooking it low and slow will give you the best results.)
- Additional Time: 5 minutes (for shredding the roast)

Ingredients
- 2 lb beef chuck roast
- 4 cups beef broth
- 1 cup onion chopped (or ¼ cup dried minced onion)
- 2 teaspoons onion powder
- 1 Tablespoon dried parsley
- salt & pepper to taste
- extra-wide egg noodles prepared
- mashed potatoes prepared
Instructions
Put your roast in the bottom of your 6 quart slow cooker.
Mix together your broth, onion and seasonings in a large bowl.
Pour broth mixture over your roast.
Cover and cook on low for 6-8 hours, until your roast is fork tender.
Make a bed of mashed potatoes topped with extra-wide egg noodles or just noodles or just mashed potatoes.
Place a serving of beef on top and ladle juices over top.
