"A good friend of mine gave me this recipe after a long discussion on Pressure Cooking. I changed the name to Pork Roast Divine, because it really is. The drippings in the bottom of the pot make the best gravy, and I often use this as a base for my mother-in-law's homemade noodles, which made my Dad's (and husband's) favorite meal. This also makes incredible bar-b-que pulled pork sandwiches."

  • 3 lbs pork loin (boneless)
  • 2 cups leeks, chopped
  • 1 teaspoon olive oil
  • 12 teaspoon sage
  • 12 teaspoon dry mustard
  • 2 teaspoons paprika
  • 12 teaspoon salt
  • 12 teaspoon thyme
  • 1 teaspoon pepper
  • 1 (1 1/4 ounce) package onion soup mix (or 1 onion, minced)
  • 2 cups water
  • 1 (15 ounce) can chicken broth (or 2 cups homemade)
  • 1 minced garlic clove

  • Sear the pork roast until nicely browned on all sides.
  • Set aside to cool.
  • Pour olive oil into the pan and cook the leeks, minced onion and garlic until done, 3-5 minutes.
  • (If not using a regular onion, minced, add the onion soup mix.) Add 2 cups of water and the chicken broth to the pot to heat.
  • Rub the roast with the spice mixture (sage, mustard, salt, paprika, thyme and pepper).
  • Put the roast into the liquid in the pressure cooker and bring to pressure.
  • Cook the roast for 45 minutes.

  1. The basic idea of this recipe is very good but I needed to modify it quite a bit. The recipe calls for garlic but does not say when to put it in. (I chose to saute it with the leeks and onions the last 3 minutes of cooking them.) The recipe also does not say how much pressure to cook the roast on. (I chose 15lbs of pressure.) I did not have a pressure cooker that had a pan to put the roast in while cooking. (Do they make these?) I put the roast directly into the sauce and cooked it for 35 minutes with good results. The rub is wonderful and I may use the rub in a separate recipe on it owns next time. This is a good basic recipe but have tested better ones.

  2. Delicious Pork Roast. I added 1/2 cup dry white wine, and used low sodium chicken broth; pressure cooked for 25 min. When the pork was done, I added potatoes, carrots, and celery and pressure cooked 20 min. for the rest of the total 45 min cooking time suggested. Next time i will cut the paprika down just a little.

  3. I haven't used my pressure cooker in a long time and thought this would be a great recipe to try. My pressure cooker does not have a feature on it to allow me to choose the pressure, however, the end result was a wonderful flavored roast! I used the onion soup mix instead of minced onion. This is a great recipe and I wouldn't change a thing. Thanks so much for sharing (and giving me a reason to bring my old pressure cooker out of moth balls).

  4. My husband is not really a pork lover but he was nuts over this recipe. Made it yesterday and he's still raving about it this morning. The only change I made was used 3 cups chicken broth and 1 cup water and I thickened the gravy with cornstarch at the end. Served it with hearty extra wide noodles. Will definately make it again.

  5. I made this and added the potatoes and carrots in the top of the pot to cook along with the meat. It was the most delicious roast I have ever made!!! Extremely tender and moist. Thickened the liquid to make the gravy and the whole meal was ready. So incredibly simple and in only 1 hour - for a roast!!! My husband said, "Babe, you've got it!" This will definitely be a staple in my family.

  1. I didn't have leeks so left it out. Also, I DID NOT add the extra 2 cups of water as it is definitely not needed as there was plenty of liquid to cook the pork. I did not add onion soup packet. Everything else was the same. It was perfectly delicious!!!!

  2. This recipe is a keeper! I cooked it with my New Year's meal and my whole family loved it. I used the onion soup mix instead of the chopped onion, per your suggestion.

  3. Delicious recipe! I substituted one cup of Chardonnay wine (white) for one of the cups of water. That really helped! I added carrots on the bottom of the cooker with the roast on top. I will definitely fix this again! A big hit with the family.
